Zesty Caramelized Carrots

Every time I make these zesty carrots, someone asks me for the recipe.  The truth is, I never have a recipe. I just sort of wing it.  When I first started making them, I had no idea how they would turn out.  I just knew I wanted something sweet and spicy.

What I love about this recipe is that you can use those beautiful multicolored carrots or the cute little baby carrots.  You can add as much spicy or sweetness as you prefer. The trick is only to not over cook them.  Mushy carrots aren’t cool.

I grew up on boiled carrots and hated them. So the idea of cooked carrots turned me of for many years. Then I tried maple roasted carrots at a farm to table restaurant a couple of years ago and I couldn't get enough. Not wanting to heat up my kitchen with the oven, I switched up the recipe a bit and fell in love with these lovely sautéed zesty carrots.


Ingredients
 8 Large carrots, peeled and diced. 1 lb. baby carrots. You can use multi-colored carrots too!
 2 tbsp Olive Oil
Dry
 ½ cup light brown sugar. Lightly packed
 2 pinches smoked paprika
 1 pinch chili powder
 1 pinch garlic powder
 1 pinch cumin
Glaze
 ½ cup honey or maple syrup
 2 tbsp butter



Directions

Using a nonstick pan, add your carrots and olive oil and bring to a sizzle with a medium heat.

In a small bowl, mix all of your dry ingredients.

Let your carrots cook for about 2-3 minutes.

Slowly add your dry ingredients and stir well. Get them nice and coated in your spices as they cook.

Cook for another 2-3 minutes.

Add your brown sugar and honey or maple syrup, and stir. Melt in your butter and cook on a low to medium heat for 3 minutes or until they reach a nice caramel coloring.

Add Sea salt to taste. And enjoy hot!
