I am obsessed with brownies.  I love them for breakfast with a cup of coffee or after dinner with some freshly made whipped cream. Well.. actually, anytime is good!

Fudgy Coffee Brownies made with Out Of The Gray Coffee!

Our friends at Out of the Grey Coffee sent us over a few of their coffees and teas for us to create a new recipe and boy, did we have a great time exploring the options!

After lots of taste testing, we settled on this fudgy coffee brownie recipe using their “Box of Chocolates” blend of coffee.  They make this blend in decaf for those of you, like myself, who avoid caffeine but still love coffee.  So this is a great recipe for a dessert that won’t keep you awake.

Coffee and Brownies

Did you know that coffee actually brings out the flavors in chocolate? And chocolate enhances the flavors of the coffee beans! It’s a perfect pair. 

The word “chocolate” comes from Nahuatl, the language of the Aztecs, who used cacao beans to brew a drink they called xocoatl. There’s evidence that chocolate might have been consumed back as far as 4,000 years ago! Blended with coffee, we use cocoa to make a treat that isn’t overly sweet but heavy on the flavor profiles.

Tips For Perfect Bakery Style Brownies:

  • Whisk your eggs before adding them to your batter to create the shiny top that makes the perfect brownie top. 
  • Don’t overmix your batter.  
  • Feel free to add in extra chips or use semisweet for less sweetness.
  • Sprinkle sea salt over them as they cool for a complex flavor.

These fudgy coffee brownies will melt in your mouth.  Easy to make, and even better to eat.  They have that lovely shiny crinkle like they are fresh from the bakery without the added gourmet cost!

 1 stick salted butter – melted soft
 1 tbsp coconut oil melted soft
 1 ¼ cups sugar
 2 large eggs – bring to room temperature
 1 tsp vanilla extract
 ¼ cup coffee – We like Out of The Gray Coffee's Box Of Chocolates Chocolate flavored coffee for extra chocolate flavor!
 ½ cup all-purpose flour – you can use your favorite gluten free flour here if you like.
 ½ cup cocoa powder
 ½ cup milk chocolate chips

Preheat your oven to 350 degrees Fahrenheit. Line your 8×8 inch baking pan with parchment paper and spray with cooking spray ( I use olive oil ).

In a large mixing bowl, combine your wet ingredients – butter, coconut oil, vanilla, coffee, and eggs and mix together until fully combined. Then whisk in your sugar and mix well. Once everything is smoothly blended, begin to stir in your dry ingredients – flour, cocoa powder, and chocolate chips and mix until everything is well blended together but don't over-mix the batter.

Gently fold in the batter into your pan in an even layer and put it into the oven for 20 minutes. Test with a toothpick by sticking in and seeing if it comes out clean. Let cool for 20 minutes and enjoy!
