What’s better than sweet and tart apple compote? How about making them boozy?
Our friends at Cask & Kettle challenged us to come up with some new recipes for their hot cocktail pods and we took that challenge and ran with it.
Well, actually it was more like sitting in my kitchen, drinking hot cocktails and having way too much fun. But we did it! We came up with several recipes using their alcoholic hot cocktail pods in new ways.
This recipe for apple compote has just the right amount of apple cider, apples, and vodka!
Caramelizing the apples with brown sugar and booze became one of our favorite fall recipes that we are excited to share with you, along with introducing Cask & Kettle’s fun new pods to our readers.

What are hot cocktail pods?
Most of us have some brand of coffee pod maker, like a Keurig. But when the day is over, most of us don’t want caffeine. Our friends at Cask & Kettle are rethinking what our coffee makers can do, now they can be bartenders as well!
Using the same pod idea as Keurig has done with coffee, everything you need for your hot cocktail is packed into their pods and is mixed together with the hot water as it pours through the machine. ( You can make the cocktails without a machine, but we didn’t. )
With great flavors like Mexican Coffee, Hot Blonde, Irish Coffee, and my favorite Spiked Dry Cider, they created a line of hot cocktails that take seconds to make and enjoy.
We had a hard time trying to decide which was our favorite, they are all very good and have the right amount of booze and flavor.

What is apple compote?
Compote is simply cooked fruit, cooked down with seasoning and it’s usually thick and chunky. Apples are easy to turn into a compote because you don’t have to peel them and they contain a natural thickening agent that along with sugar turns into a lovely caramelizing effect over the apples that locks in the fruity flavors and also absorbs the cinnamon and nutmeg.
Compote usually lasts in the refrigerator for at least a week. It’s also great for topping ice cream, oatmeal, yogurt, and waffles. We won’t tell anyone that you’ve been eating boozy apples for breakfast!

- As a side dish next to our Tofurkey
- On Waffles
- Make an Apple Cider Slushie
- Over yogurt
- In the bathtub with a glass of wine
- Hiding from your In-Laws
- Wherever you want, we won’t judge.

Tipsy Apple Compote

Begin with brewing your Cask & Kettle Spiked Cider pod in your machine or putting your apple cider and rum together. Since we made this recipe for our friends at Cask & Kettle, we used their cocktail pods and the colors and success of this recipe are based on using their pods.
But since you might not have access to their pods yet, we suggest giving your spiked cider a sip to make sure it is a combination of sweet and has the flavor that you like. We also suggest that you use a good thick apple cider.
In a large pot, melt your butter, honey, and brown sugar together. I like to make sure the butter is fully melted on a low heat until it starts to bubble with the brown sugar. Add in the cider, your spices, and apples and fully coat the apple mixture.
You are going to keep stirring your apples on low-medium heat for 15 minutes until the apples get tender and start to carmelize to a golden brown. If they get too thick or start to stick, you can add a little water (1-2 tablespoons or more apple cider) to keep cooking until the sauce is a nice honey consistency. Then remove from pot into a refrigerator safe container to cool.
You can keep in the refrigerator for at least a week. We use sterile mason jars and lids to keep them for a bit longer. You can also freeze this compote for later!

OMG this looks fantastic! I want to eat this with a glass of cider and a big bowl of ice cream! I also need to get some of those Keurig pods! That sounds amazing!
