Today is a busy day.  I barely have time for lunch. So I need something quick and healthy.  So there is nothing better in a dash than an easy tuna salad with an avocado twist.

2019 is the year of YOU. So if you are chasing the clock and trying to find new ways to eat mindfully as well as indulge a little, this is quick and easy so you can get back to working on making this the best year ever.


There are so many ways you can twist up tuna salad.  But I really wanted to drop the mayo today and add in something with a little more flavor.  So I grabbed a nice ripe avocado and diced it up.

I threw in some spices and toasted some fresh whole grain bread and before I knew it, lunch was ready and I actually had time to eat it!


Remember, don't squeeze your avocadoes.  You cause them to bruise that way.  Instead, press that little button tip at the top and if it goes down, it's ripe.  If it stays hard it needs a little more time. Toss it in a paper bag and try again tomorrow.

Here we go!

  • 1  ripe avocado
  • 1 lemon – juiced or 3 tbs lemon juice
  • 1/2 cup arugula – chopped
  • 1 tsp paprika
  • 1 can albacore tuna

Optional:  I loved Trader Joe's new chili lime seasoning on top for a little zest.



  1. Cut avocado in 1/2 then dice in the avocado before you scoop out the middle.  Then place in a bowl with your tuna, arugula, and seasoning.
  2. Be fancy and scoop your salad back into the avocado shells or have as a sandwich on some whole wheat toasted bread.

Try This: Add onions, celery, or even smashed Doritos for crunch! Yes, I love smashed Doritos as a topping. It keeps me from eating the whole bag and I love the crunch.
