I love making homemade ricotta. It is easy, uses simple ingredients, and doesn't take much time or effort. Better than store-bought, you can make a large batch of ricotta and use it for several recipes this week.
I love it spread over toast, add a dash of lime and a pinch of ground red pepper… mmm, better than avocado toast and cheaper!
One of the cool things about ricotta is that you can use up leftover milk. We had a gallon about to expire after my husband and I both dashed to the store one night to get milk… separately, not knowing the other one had gone. So we came home to a lot of milk and not enough cookies to dip. That was my inspiration for making fresh ricotta and I was so glad that I did. Now I make it all the time!
