I wanted something quick, easy, and inexpensive. So why not Garlic Shrimp with some fresh green beans?

Here's that recipe:

  • 4 tablespoons Olive oil or Avocado Oilcost
  • 4 cloves garlic, minced
  • ¼ yellow onion, minced
  • 2 cups fresh Green Beans – ends trimmed
  • 1 pound medium shrimp, peeled and deveined (defrosted if previously frozen)
  • ½ cup lemon juice or 1 sliced lemon
  • ½ teaspoon garlic powder
  • ½ teaspoon red pepper flakes (optional)
  • Sea salt and freshly ground black pepper, to taste
  • 4 tablespoons (1/2 stick) unsalted butter – melted
  • ¼ cup freshly grated Parmesan


This is your dish! Feel free to swap out green beans for Brussels Sprouts, carrots, or even wait til the end and throw in some fresh spinach. Be creative!

My husband loves a little more spice. So he topped his plate with a fiery Thai chili sauce that was actually pretty good!


Heat oil in a large skillet over medium heat. Add garlic, onions and red-pepper flakes; cook, stirring, until garlic is fragrant and golden (but not brown), about 30 seconds.

Add your Green Beans and sauté 3-4 minutes.  You want them to be crisp, not wilted and soft.

Move your beans, garlic and onions to one side of your pan and add add your shrimp in an even layer in the pan and cook for 1 minute without stirring.

Add lemon, garlic powder,  pepper flakes, salt and pepper, and butter over your shrimp and cook for 2 more minutes.

Give it all a good stir to evenly mix it all through. Top with parmesan cheese.  Then serve hot.
