I love sushi.

But sushi is an art, and many places just don't do it right.  From making everything fried, stuffed with the same ingredients, overdoing breaded shrimp, and throwing a gallon of sauce on top to smother out the fresh flavor of the fish, many American sushi places just make food, not art.

Aji Sushi in the Issaquah Highlands neighborhood of Issaquah, Washington however does sushi the way it should be made.

I still love the little pleasures like the hot towels and complementary Miso Soup.

The staff is always very friendly.  For an extra treat, sit at the sushi bar and ask the sushi chef for his recommendations.

They are also Gluten Friendly, you can ask for the GF soy sauce too.

Aji can be a bit expensive. But it is a nice treat or date night spot. Located in the Issaquah Highlands, it is walking distance to the movie theater, cute bars, and some local shopping boutiques.
