Zucchini Ribbon Pizza by Till the Last Bite

This is a cool take on the classic pizza. I love the colors and textures in the ingredients. Great recipe!

Till The Last Bite


Prep time: 15 minutes

Cooking time: 15 minutes


For the pizza:

  • Pizza Bread
  • Zucchini
  • Sun dried tomatos
  • Olives
  • Pesto
  • Chilli flakes & oregano

For the pesto:

  • 1 cup basil leaves
  • 3 spoons olive oil
  • 3 cloves garlic
  • 6 pieces walnut
  • Salt and pepper to taste


For the pesto:

  1. Combine the basil, garlic and walnuts in a mixer. Blend till roughly combined.
  2. Mix in the olive oil. Blend well.
  3. Season with salt and pepper.
  4. Add lemon if wanted.

For the pizza:

  1. Pre heat the oven. Bake the pizza bread till slightly baked (slightly crisp and brown).
  2. Use a vegetable peeler or a knife to cut the zucchini into thin ribbons.
  3. Blanche these thin strips in warm water for 1-2 minutes.
  4. Cut the sun dried tomatoes and blanche in warm water for three minutes.
  5. Spread a generous layer of pesto on the slightly baked bread.
